COTSWOLD HANDMADE MERINGUES

Working to an original recipe handed down by their mother, Muriel Morrissey, daughters Lisa and Jan have been perfecting their techniques to bring us the perfect meringue. We all know that a good homemade meringue should be crispy on the outside and chewy in the middle, but creating that on a mass scale for shop-bought meringues is a different matter.

Thankfully, Lisa and Jan have discovered the secret – use eggs that are not too fresh and add brown sugar at exactly the right time. Despite making 1000s of meringues each week, the products are still carefully handmade. This attention to detail has won Cotswold Handmade Meringues a number of repeat customers, with their products being sold in shops and food markets in Gloucestershire and other counties.

Meringues make for an incredibly versatile dessert so it was important for Lisa and Jan to develop a number of innovative products. These include meringue whirls and nests in a number of flavours, mini meringue bites, and round meringue bases, ideal for pavlova.
