SIMON WEAVER ORGANIC DAIRY

Simon Weaver has been making his legendary organic Cotswold Brie for over 15 years at Kirkham Farm near the village of Lower Slaughter. Over the years, the cheese collection has grown to include a herb brie, a smoked brie and a blue-veined brie, mozzarella minis and an award-winning single Gloucester, produced in collaboration with Gloucestershire Wildlife Trust, to highlight the benefits of organic farming.

The farm follows a method of organic farming that places great emphasis on animal and land welfare. The dairy cows can enjoy beautiful, organic pastures and clover-sown meadows that have never been intensively farmed, and a farmer who knows each and every one of them by name.

All of this makes for happy cows, which in turn leads to increased milk production - no wonder Simon Weaver brie’s are so amazingly creamy. The onsite creamery is used by cheesemakers who have been sourced from all over Britain and abroad for their skills and expertise in cheese-making. The delicate cheese-making process begins in earnest at 6.30am and 1200 cheeses are made in a four-hour period from 1500 litres of milk.
